This time laps is about an hour in real time of the last half of the cleaning 2 soft ice cream machines. First half is done the night before at the close of biz. Both machines are disabled wash, rinse, sanitized and left out to air dry over night by my wife. I come in the next morning from 9 to 10 am to lubricate a few of the moving parts, re assemble everything, sanitize, purge the sanitizer than add the ice cream mix, purge the air from the 4 ice cream cylinders. Than wam a dam by 11 am we got soft ice cream and frozen yogurt.
